At the farm, we’ve been loving this recipe - it’s the perfect mix of comfort and zing. Our delicious homegrown potatoes cooked until golden, crispy on the outside, and fluffy on the inside then tossed in a lemony, zesty syrup and a sprinkle of fragrant za’atar.
If you’re looking for something fresh to kick-start the new year, these zesty roasties add a little brightness to winter evenings. They’re wonderfully versatile too. They pair beautifully with a falafel salad, crispy tofu, or a hearty tray of roasted veggies for a vegan dish. They are also delicious alongside shawarma-style wraps, grilled halloumi, or roast chicken.
INGREDIENTS
- 5 x Potatoes
- 3 Tbsp Vegetable oil
- 1x garlic bulb
- 2x lemons
- 3 tbsp water
- Handful of fresh parsley
- 2 tbsp za'atar

Pinch of sea salt (we like to use Maldon sea salt)
METHOD

First, preheat your oven to 200°C. In the oven, place a roasting tin large enough that all your potatoes will touch the base.

Wash, peel and dry your potatoes. Parboil them for 8 minutes and then drain and shake to fluff up the edges and let them steam dry.

Add your oil to the hot roasting tin in the oven and continue to heat the tin.
- Add the potatoes to the roasting tin and turn the potatoes to coat with the oil.
- Cook for 30-35 minutes or until golden. Turn the potatoes after 15 minutes cooking to give them an even colour.

Whilst the potatoes are cooking, make the lemon za'atar syrup. Zest two lemons and lemon juice, then add these to a small saucepan. Add 2 tbsps of water, 1 crushed garlic clove. Heat gently over medium heat until syrupy (10mins). Take off the heat and add 2 tbsps of za’tar and 1tsp of sea salt.
- Once cooked, remove the potatoes from the oven. Toss the potatoes in the lemon syrup immediately, add chopped fresh parsley and additional seasoning if needed. Serve with more fresh lemons slices if you’d like.
