Have you heard of mashed potato pizza? It’s the perfect meal for using up the last of the leftover vegetables and herbs around the kitchen and in the fridge after a busy festive season. This comforting recipe uses up the humble leftovers to make something delicious. Start with your mash potato dough base, then a choice of a rich tomato or mascarpone base and add your favourite vegetables and a sprinkle with fresh herbs for the ultimate sharing dish.
INGREDIENTS
- 400g potatoes (mashed)
- 200g rye flour
- 1 teaspoon baking powder
- 2 teaspoons mixed dried herbs
- 150ml milk
Toppings of your choice:
- Red Onion
- Mushrooms
- Thyme
- Mascarpone
- Potatoes
- Tomatoes
- Peppers
METHOD
- First add the flour, baking powder, the mashed potato and herbs into a mixing bowl. Mix together well using your hands.
- Then add the milk and form a soft pizza base dough.
- Flour the worktop surface and knead to form a ball of dough.
- Pre-heat the oven to 220°C and place the dough onto a baking tray lined with grease proof paper. Press the base from the centre outwards to create a round pizza base, to a 1cm thickness.
- Place the tray into the oven and bake for 12 minutes.
- Adjust the oven to 200°C. Spread the chosen pizza base ingredient: mascarpone or tomato puree over the base.
- Then add the chopped toppings to the top. If you are using slices of potato, you will want to make sure these are very thin so they crisp up on the pizza.
- Place the tray in the oven for a further 10 minutes or until the base and crusts are browning and crisp.
Slice and serve with a side salad or your favourite dipping sauce.
